First I slid the skin off (set that aside for later), then deboned the thing, then pulled off the pieces of meat. It actually tasted like chicken. It was tender like chicken and didn’t have any sort of reptile-y taste. Overall it was a good experience, and now I can say I’ve tasted lizard.
